"Progressive Cuisine by Chef Gaggan Arnand" (Lecture)
22 January 2012 / 14:00 - 16:00 / Auditorium, TCDC / Free Admission
Chef Gaggan Arnand, owner of Bangkok's first progressive Indian cuisine restaurant Gaggan, will present new cuisine techniques created and developed in Spain before gaining popularity around the world. Be it deconstructed dishes, foams, spherifications, or cooking with liquid hydrogen, this modern cuisine seeks to make eating a sensorial and intellectual experience in which the sense of humor and surprise play a major role.
Chef Gaggan studied at the Alicia Foundation (www.alicia.cat), a research center for culinary innovation co-founded by the Michelin-starred chef of the restaurant El Bulli, Ferran Adrià.
The lecture is part of the exhibition "Foodjects: Design & the New Cuisine in Spain".
