The role of chef in a modern style of cooking is to redefine culinary language. In other words, a progressive chef aims to reinvent traditional cooking methods using the new culinary technologies to arouse sensations and imagination, and to contribute to the development of culinary arts.
Chef Gaggan Anand from Bangkok’s first progressive Indian cuisine restaurant Gaggan will present new cuisine techniques created and developed in Spain before gaining popularity around the world. Be it deconstructed dishes, foams, spherifications, or cooking with liquid hydrogen, this modern cuisine seeks to make eating a sensorial and intellectual experience in which the sense of humor and surprise play a major role.

Chef Gaggan Anand studied at the Alicia Foundation, a research center co-founded by the Michelin-starred chef of the restaurant El Bulli, Ferran Adrià, to generate knowledge and provide tools and scientific rigor to the culinary field. A delightful example of culinary creativity, Gaggan restaurant introduces inventive dishes created by combining molecular gastronomy with traditional Indian ingredients and recipes.

The lecture is part of the exhibition “Foodjects: Design & the New Cuisine in Spain”.
